- 1 banana
- 2 eggs
- 50 grams of oatmeal
- 2 grams Marine Phytoplankton
- 1 tsp baking powder
- 1 tsp cinnamon
- pinch of salt
- 3 tbsp coconut oil (for frying)
- Optional: (coconut) yoghurt, fruit of your choice, coconut flakes, pumpkin seeds, goji berries, cacao nibs, peanut butter, honey for topping.
Supplies:
- Hand blender
- Frying pan

This is how you make it
- Peel the ripe banana and break it into pieces in a bowl.
- Add the eggs, oatmeal, plankton, baking powder, cinnamon and a pinch of salt.
- Mix everything with a hand blender until smooth.
- Heat the coconut oil in a frying pan over medium heat.
- Scoop small portions of the batter into the pancake pan.
- Fry the pancakes on both sides until golden brown.
- Divide the pancakes on a plate and garnish with the desired toppings.

Tip: add 50g (frozen) pumpkin to your batter for extra nutrients and fiber. Pumpkin is sweet, nutritious and packed with vitamins, minerals and antioxidants.
